
Curry

Sauté onion and bell pepper in oil until onion is translucent.

Add potatoes, carrots, and stock.

Add curry cubes, ketchup, and soy sauce. Break down blocks of curry.

Cover and bring to a simmer over medium heat for 15-20 minutes, stirring occasionally, until potatoes are soft and curry is thick.
Tofu Katsu

Drain water from tofu and press tofu with a heavy object to drain more water for at least 15 minutes.

Slice tofu in large, 1/4 inch thick, squares. Soak in soy sauce for at least 10 minutes.

Prepare the batter by flour, corn starch, salt, paprika, and water until smooth. It should be thick. On a separate plate or bowl, add the panko.

Heat oil in a frying pan.

Coat each piece of tofu in the batter then in the breadcrumbs then add to frying pan. Fry until golden brown on both sides then put fried tofu on a plate lined with papertowels to collect extra grease.
