Preparation

  1. Heat olive oil in a large skillet over medium heat. Add the onion and cook until translucent, about 5 minutes.

  2. Stir in the diced tomatoes, salt, pepper, and red pepper flakes. Simmer for 3-4 minutes, stirring occasionally.

  3. Add the garlic, vegetable stock, and spinach. Cook for 2-3 minutes, until the spinach wilts.

  4. Add the cooked tortellini and stir to combine.

  5. Top with Parmesan before serving.
