Preparation

  1. Preheat oven to 350°.

  2. In a large bowl, cream together butter and sugar. Add eggs, mixing after each one. Then add zest.

  3. Add flour, baking powder, and salt. Fold to combine.

  4. Grease muffin tin. Add 1/2 to 1 teaspoon of brown sugar into each muffin container then add one slice of clementine to each tin.

  5. Top each tin with batter and bake 25-30 minutes until golden brown.

  6. Use a spatula to gently loosen each cake and tip out onto a wire rack to cool.
