
Preparation

Preheat oven to 350°.

In a large bowl, cream together butter and sugar. Add eggs, mixing after each one. Then add zest.

Add flour, baking powder, and salt. Fold to combine.

Grease muffin tin. Add 1/2 to 1 teaspoon of brown sugar into each muffin container then add one slice of clementine to each tin.

Top each tin with batter and bake 25-30 minutes until golden brown.

Use a spatula to gently loosen each cake and tip out onto a wire rack to cool.
