Preparation

  1. Preheat oven to 400°. Line a standard sized muffin tin with cupcake liners.

  2. In a large bowl, combine the wet ingredients until smooth then add dry ingredients being careful not to over mix.

  3. Gently fold in blueberries until dispersed through the mix.

  4. Spoon the batter into muffin tin. You can fill these up all the way to the top if you want tall muffins that spill over the edge of the liner. Spray edges of muffin tin with oil to avoid muffin tops sticking.

  5. Bake for 20-25 minutes or baked through.
